Ingredients:

  • 1 cup pumpkin puree
  • 1 cup whole wheat flour
  • 1 scoop vanilla protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup milk (dairy or plant-based)
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Cooking spray or butter for greasing the pan

Instructions:

  1. In a large mixing bowl, combine the pumpkin puree, eggs, milk, maple syrup, and vanilla extract. Whisk together until well combined.
  2. In a separate bowl, whisk together the whole wheat flour, protein powder, baking powder, cinnamon, nutmeg, ginger, and cloves.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Please be careful not to overmix; a few lumps are okay for me.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly coat the surface with cooking spray or butter.
  5. Pour 1/4 cup portions of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set (usually 2-3 minutes).
  6. Flip the pancakes and cook for an additional 1-2 minutes on the other side or until golden brown.
  7. Remove the pancakes from the skillet and repeat the process with the remaining batter.
  8. Serve the pumpkin spice protein pancakes warm, topped with your favorite toppings such as maple syrup, chopped nuts, or whipped cream.
